How does retort technology work?
The retort technology works by first placing the food products into airtight containers, which can be made of cans, jars or pouches. The airtight containers are then seal to prevent air and contaminants from entering. The sealed containers are loaded into a retort chamber, which is a specialised industrial pressure cooker. Steam or hot water is used to raise the temperature within the chamber to a level that is sufficient to kill bacteria, yeast, moulds, and other pathogens in the food. In the meantime, the retort chamber is also pressurised to ensure that the high temperature is maintained consistently throughout the cooking process. The combination of heat and pressure is essential for achieving thorough sterilisation. After the food has been heat-processed, the retort chamber is cooled rapidly to prevent overcooking and to preserve the quality of the food.
